Apple gorgonzola salad

Not a salad fan? This tantalizing combination could change your mind. Sweet apples, tangy cheese and rich walnuts promise a delectable flavor combo that will make this salad disappear. Pair with some lean protein for a satisfying meal that will fill you up. This salad tastes even better after a couple of hours, so make enough for lunch and dinner.


Ingredients

  • 2 large Braeburn apples (thinly sliced)
  • 2 tbsp fresh lemon juice
  • 1 large carrot (peeled and thinly sliced)
  • 8 cup mixed salad greens
  • 1 small red onion (thinly sliced)
  • 2 tbsp fresh orange juice
  • 1 tbsp honey
  • 2 tbsp fresh lemon juice
  • 2 tsp Dijon mustard
  • 1/4 cup walnut oil
  • 1/4 cup toasted walnut pieces
  • 3 tbsp gorgonzola cheese (crumbled)

Directions

Step 1:

Coat apples with the lemon juice and put them aside.

Step 2:

Place carrot slices and mixed greens on a platter. Top with onion (optional) and put aside.

Step 3:

Whisk together orange and lemon juices, then honey and mustard. Slowly add oil in a thin stream, whisking constantly.

Step 4:

Add apples to the salad. Top with walnuts and cheese. Then drizzle on the vinaigrette.
