Whole wheat tortillas and a generous helping of veggies boost the fiber and other nutrients of this meal. Starting with a leftover lean cut of steak, it’s a yummy lunch that comes together in minutes, with a balanced nutritional profile. Add a dollop of salsa to punch up the flavor even more.
Ingredients
- 2 tsp. canola oil
- 2 c. sliced onion
- 2 c. sliced bell peppers
- 20 oz. steak, cooked
- ¼ tsp. salt
- 4 (8-in.) whole wheat flour tortillas
Directions
Step 1:
Heat oil in a large, nonstick skillet over medium to high heat.
Step 2:
Add onion and bell pepper. Sauté for 5 minutes.
Step 3:
Add cooked, sliced steak and sauté for 2 to 3 minutes to warm. Sprinkle with salt.
Step 4:
Wrap tortillas in damp paper towels and microwave on high for 1 minute.
Step 5:
Put each tortilla on a plate. Divide the steak, onions and peppers among the four tortillas.
